🌼 Cinco de Mayo Fiesta 🌼 Get ready to spice up your May with these perfect recipes for Cinco de Mayo:

Classic Margaritas: Lime + tequila is with a zesty twist - add jalepeno and tajin to the rim to make it spicy or make a blood orange or pineapple version of the classic. Experiment + have fun!

Corn Tortilla Chips and Roasted Tomato Salsa: Roasting your vegetables first makes an even more delicious homemade salsa.

Guacamole: Herby, garlicky, and irresistible!

Tres Leches Cake: Vanilla sponge cake covered in a sweet milk mixture of three milks.

Tres Leches Bread Pudding: A hispanic spin on classic bread pudding. It's seriously good, too.

🍄 Morel Mushroom Magic 🍄 It’s one of my favorite times of year in Minnesota—Morel Mushroom season has arrived! These elusive and highly coveted mushrooms are popping up, ready for our annual foraging adventures. If you're curious about our success so far, I post our mushroom adventure stories on Instagram.

Morels are known for their distinctive honeycomb appearance and rich, earthy flavor that makes any dish a gourmet experience. They happen to be an absolute favorite treat for our household.

They taste so good just sautéed in a little butter with salt & pepper. But I also use them on my savory mushroom tart as well.

🌼 Recipe Tries (& Fails) 🌼 We’re always busy in the kitchen trying new recipes, other blogger's recipes, and delicious treats from various cookbooks. Here are the recipes of note:


Miso Pickled Broccoli Stems from Bon Appetit: 0/10. These sounded intriguing but turned out to be a real miss. Ended up in the garbage. 0/10. Still fun to try, though!

Make-Ahead Lasagna from Culinary Hill: 10/10. This dish is a lifesaver! Perfect for helping out friends in need or just having a delicious meal ready to go in my freezer. 10/10.

Swedish Meatballs from The Cozy Cook: 10/10. Fabulous with creamy mashed potatoes. A delicious comfort food.

Overnight Oats from Happy Honey Kitchen: 10/10. For those mornings when I've needed a quick, healthy start before rushing out the door, these have been a lifesaver.

Eggplant Parmesan from Love & Lemons: 10/10. We made this after finding perfect eggplant at our local Asian grocery store.


🌼 A Fresh Look 🌼 Have you noticed the recent changes around here? I’ve been busy taking courses, honing my skills in newsletters, writing, & email technology. We switched over to a new email platform in hopes that our emails will actually find their way into your inbox and not your junk mail.

I've also been taking more courses on blogging, how to do videos, and more. This journey of improvement is all for you!
